Have you heard about the fast casual Egyptian chain, Zooba? We are happy to announce that they recently opened their sixth location in Nolita, NYC! Hailing from Cairo, it brings Egyptian street food to the streets of The Big Apple. Chef and co-founders Moustafa El Refaey and Chris Khalifa have always had the vision to take their restaurant outside of Egypt with an ultimate goal of putting Egyptian food on the map. They are well on their way as they make their grand debut in the United States.

To keep food quality consistent Zooba uses Winston CVap technology to maintain the correct food temperatures. For cooking precision they use stacked Rational SelfCookingCenter Combi Ovens to cook a variety of food items featured on their menu. The menu at Zooba contains Egyptian food classics with a twist, but they're best known for using fava beans in their dishes.

We had the pleasure of working with Moustafa and his team in our test kitchen while they product tested their menu. We wish them the best of luck with their new location!
